Plants we typically categorize as "weeds" and a worthless nuisance may actually have value as a tasty, inexpensive food source. Put away the Round Up and take out the salt and pepper!
Joran Viers, botanist and director of the Bernalillo County Cooperative Extension Service, and Teresa Franklin, a personal chef, team up to help you identify and prepare the tasty foods volunteering to grow in your yard. Plants such as dandelion, lambsquarter, amaranth, cattail, and purslane are all highly nutritious, quite tasty and it is likely that one or more of these plants are growing in your yard or nearby. In fact, lambsquarter, also known as wild spinach and quelites, rivals spinach in flavor and can be found on tables at local farmer's markets. Several of the plants we will be targeting for preparation are, under City of Albuquerque ordinance, nuisance weeds. These plants may not be propagated and landowners are required to remove them. This class offers an enjoyable and non-chemical solution to weed removal.
Viers will lead a walk identifying and collecting plants for preparation. Franklin will take the foods collected and show you simple recipes to prepare them. You will receive instruction, a plant identification booklet, recipes, and tastings.
The class is $25.00 per person. You are encouraged to bring sun protection, water, and a pocket knife or clippers. Space is limited. Call (505)897-8831 to register.
