K J Eggs

K J Eggs
Eggs-actly
October 2011

Lots of our diversified farmers bring along eggs since chickens are a necessary part of a well-rounded small farm, but we have only one vendor who is seriously into eggs. Ken Baltz runs K J Eggs near Abiquiu, and though he, too, has had a difficult year, he's still plugging along. Mostly his problems have been his health, but now that he's had back surgery, he's doing much better, and he smiles a lot more.
After all, it's hard taking care of several thousand birds when your back is hurting, so this is a vast improvement. He produces mostly chicken eggs (his mantra seems to be, "More chickens!"), but in summer there are duck eggs and turkey eggs, too. And lately he started raising rabbits as well (er, no, not for the eggs--for meat) and is currently the only purveyor of rabbit meat at any of our local markets.
