Cilantro Parsley Sauce

This green condiment or sauce is known in many cultures under different names, with some subtle differences. Examples include gremolata from Italy, chimichurri from Argentina, persillade from France, and others. In all instances, herbs are combined with garlic and other ingredients like lemon zest, oil, onion, salt, pepper, red pepper flakes, and lemon juice or vinegar. But no matter what kinds of herbs or other ingredients you use, this is a sauce that can be used on bread, meats, fish, soups, and salad. Choose whatever locally grown herbs are available during any given season; you won't regret making it using 100% cilantro if fresh parsley can't be found. This sauce is worth keeping in your refrigerator at all times and adapting to your needs (add more oil/vinegar to adjust it as a salad dressing or marinade, for example).

Ingredients
  

  • 1 bunch cilantro
  • 1 bunch parsley (you can also use all cilantro or all parsley)
  • 1/2 cup olive oil
  • 1/2 onion (optional...choose from red or yellow)
  • 4 cloves garlic
  • 1 lemon
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp red pepper flakes (optional)

Instructions
 

  • Wash the cilantro, parsley, lemon, garlic, and onion, and dry. (It's important to wash any produce you'll be eating raw.) Peal the garlic and onion.
  • Chop the cilantro, parsley, garlic, and onion and place in a food processor. (You can make this without a food processor by chopping all ingredients finely with a knife.)
  • Zest then juice the lemon, and add to the food processor.
  • Add the remaining ingredients and pulse until finely chopped (don't pulse it too fine, like a pesto; you want the sauce to be have some texture). If you want a runnier sauce to use as a dressing or marinade, add more olive oil, a tablespoon at a time, until the desired consistency is reached.
  • Place in a jar and store in the refrigerator; you'll find yourself reaching for it again and again!
