Overnight oats are perfect for a spring breakfast because it’s light and filling. Combine oats, chia seeds, spices, yogurt, and/or milk (dairy-free alternatives work too) with grated carrots, local honey, and pecans.
Use this recipe as a guide to make other overnight oats throughout the seasons. For example, you could use peach and ginger in summer, cherry and chocolate in high summer, or even apple pie-inspired overnight oats in the fall.
Ingredients
- 1 cup oats
- 2 tbsp chia seeds
- 2 tsp pumpkin pie spice (or 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp cloves, 1/4 tsp ginger, and 1/4 tsp cardamom)
- pinch of salt
- 3/4-1 cup milk (dairy or nondairy)
- 2 tbsp local honey
- 2 tbsp yogurt
- 1 tsp vanilla extract
- 1/3 cup of grated carrots (1/4 cup for batter)
- Toppings: more yogurt, grated carrots, pepitas, pecans, bee pollen
- Mix your dry ingredients (oats, chia, spices, and salt) in a bowl.
- In another bowl, stir wet ingredients (milk, honey, yogurt, vanilla, and carrots) together.
- Combine wet and dry ingredients to make the oat batter.
- Spoon oat batter into 16 oz jar or two smaller jars and put lids on them. Refrigerate for four hours or overnight.
- In the morning, take your jars out and garnish with extra toppings. Overnight oats are to be enjoyed cold and are as decadent pudding or parfait. Healthy breakfast disguised as dessert? Yes please!

Cook’s note: If you want to decrease the number of dishes to wash, make your oats in one big jar. Use a 32 oz jar or larger if you double the recipe. Make sure your jar is clean and has a tight-fitting lid. Add your dry ingredients to the jar and shake to combine, add the wet ingredients, put on a lid (make sure it’s sealed tight!), and shake the jar again to combine all of the ingredients. Check on your oats after a couple hours in the fridge and add more milk if you’d like softer texture for the oats.
