For the month of September, we’ve reached our final color in the Eat the Rainbow series and are highlighting orange produce varieties for the beginning of fall. 

Orange fruits and vegetables get their color from beta-carotene, which is a type of carotenoid pigment found in yellow, orange, and red produce. Beta-carotene is important for your diet because it helps to convert vitamin A in the body, which supports growth, vision, and cell function. Beta-carotene also acts as an antioxidant, which assists in protecting cells from damage. It also supports overall eye and skin health and immune function.
